Quite a few years ago, shortly after getting into home brewing, I brewed a batch of cantaloupe wheat beer. I put some of the juice to the side to use as priming. The juice got left out far too long at room temperature. I didn't realize this until after bottling when I tried one and it had a tartness to it that I didn't expect.
It actually turned out quite nice.
