Well in my entirely non expert opinion, that leaves one basic flavor profile. All fruit/citrus it is. I got a couple that can hopefully do the trick. If not, at least he'll like the hop salads I'll send

That's my dilemma too. Saison is the baseline for farmhouse beers for me. I'll find something else to make fun of him for. Not like I don't have plenty of ammo.

Bedtime friendly friends. Had a bunch of very exciting water to drink today. Looking forward to coffee in the mroning.
 
Way, way behind.

Studying all night. Watching the last of Caps/Ducks after calling it a night.

Tonight, Bluebird, 2x Resin, Fullers London Porter, Hobsons Town Crier, Sam Smith Nut Brown.

Working on that second Resin now.
 
I have a ton of stuff. Like literally.

More on its way soon - my mother went to the hospital today (BP was way too high) so I didn't get anything shipped out. I have it boxed up nicely, just need to get by the FedEx place.

Why? Because I love snow, and I'd like to see it fall like it can during "lake effect snow". This North Carolina boy loves the cold weather!

Don't worry. I'll try to fix him. Well diagnose what particular ester profile turned him off from saisons. I'm guessing it's some apply bubblegum banana thing

That'd be the one that I can't stand from saisons. Had it come out slightly in one of my first few IPAs that I made that everybody else was raving over. It was subpar because of it. I thought it had to be esters, but nobody else could taste it, so I just thought I was being overly critical. Then I tried my first saison, a Tank 7. I mean sure if you people like spicy bubblegum beer, it's a good one.
 
Bout to go drycarb a pale ale that I split three ways. In the boil was only cascade. Into the fermeters was more cascade in 1, amarillo in 1, and citra in 1 - a pre-ferment drycarb if you will. Now they've been fermenting for 9 days, so they should be done. Will be drycarbing the same way. Leave those for 5 days, then I'll toss them into the ferm chamber where the bo pils is cold crashing/lagering.

Gonna be tossing some gelatin into the bo pils today too. I want this thing to be super duper crystal clear (I'm attempting the quick lager method, except I'm leaving it cold for a bit longer than he does before packaging, because I'm bottling). So I was thinking of hitting it with gelatin twice. Do you friendlies think this will make a difference?

Dunno how they did those chips. They are spot on to the real deal. Story is it took them seven batches to get the seasoning to melted American cheese flavor profile exact. How the hell they managed to get that melted cheese flavor I'll never figure out.

NC was the only state I know that imports their weather. Crazy patterns down there. Never can figure what's going to happen during years like this so far as I can remember

Morning friends. Coffee. Incoming beer mail and 20k box out for delivery today. Wife is convinced baby is coming very soon. Sick kids. It shall be a busy day.

you make a VERY valid point. Sausage making doesn't kill my appetite, but perhaps seeing the sorcery of seasoning for this kind or product would. Not telling what sort of methods they are throwing at this.
