Cheesy hops are never good. Nor are cat piss hops.

If your hops are cheesy, you either aged em too long, didn't age em enough, or didn't age em right. Me personally, I won't bother with aged hops. I just do a very small addition of very low alpha noble hops at the very end of the boil.

If I have to judge one more cheesy sour beer at a comp...

Putting "cheese beer" in the Con column of my pro/con list for BJCP.

The "pro" list is just "free beer". That's it.

Unless we're talking about a HH saison. With HH, more cheese is better good.
 
Most of the time I get cheesy sours at comps, they're badly sour mashed Berliner Weisse. Which is that lovely isovaleric/butyric acid combo of rotten parmesan and vomit. Usually the cheesy hop problem isn't quite as pronounced. A fault, but not an undrinkable fault. But bad sour mashes will usually get the worst scores I've given (only time I've ever gone as far as the courtesy score).

Quick question. For a five gallon batch what do you think the average PSI going through the Airlock/Blow off tube would be?

I have a senior design class asking and I have never worried with such info.

I bought aged hops for a sour, smelt them and couldn't bring myself to do it.
If I'm spending a year on a beer I sure as hell don't want it to smell like that.

Thanks, they are working on a controller and have a presentation and wanted a number.

My numbers are based on homebrew-level conicals being able to withstand 3 PSI, maybe 5 max. It's probably well below that actually produced unless the fermenter is actually sealed. Commercial unitanks can withstand higher than that when used for spunding.

Catching up on the days missed posts so I am not sorry if I miss something or post something someone else does.

I've been watching HBOGo on my Amazon FireTV stick for the past 4-5 days. I noticed this weekend that after watching a good 5 episodes of something that I will get a lot of "buffering" attempts. It seems like it happens around 8 pm on Friday/Saturday/Sunday. Normally I'm not laying around on the couch for that amount of time, but I had to. That said, I've had to reset my modem and router each time to get out of it. Almost as though I need to empty the cache or something. Has anyone ever experienced this? I know my connection was "repaired" not too long ago. It was mangled outside and TimeWarner fixed it and gave me a new modem.

The modem is actually not a terrible model. It is the Arris Motorola SURFboard SB6121. I have "extreme" internet which I think is supposed to be 50 MBPS, maybe. It was doubled or some junk like that. I decided to buy a modem since TW is charging me $10 a month to lease their's. I got the Arris Motorola SURFboard SB6141, which handles higher speeds. I'm hoping that maybe that helps my issue. I don't think I'm being throttled. Internet usage for this month is about 40% lighter than the previous months, oddly.

I decided to try to get a slightly better modem. If that helps then I save that $10 a month. If it doesn't then I question whether I should go to the next level of internet for $10 more. I am paying TimeWarner $70 a month for internet today. A bundle may save me but I'm not leaving DirecTV.

Unfortunately that is peak internet hours. Cable internets kinda pool the bandwidth and when all of your neighbors are watching their porn you will notice slower networking because they are using it all.

Thanks man, the new job is shipping nuclear fuel logistics and engineering. So I'll be learning a lot of new skills and traveling all over the world. I had to make the exit from this job amicable because I'll still be in the same circle as my current bosses, and I may have to work with them again. New bosses are pretty laid back so I may be able to check in more than I think, but I need to bust my a** to make sure they are happy with their new hire haha

I hope the south isn't too bad, at least up up in the foothills of the App mtns and 1 hr from the AT trailhead.
