Lets wait to see how that wooden rooster tastes tonight. If the barrel is fading we can do a small trade now do i can drink those. If its still fantastic, and I'm sure it is, we can wait if you want. I'm down either way though really. Just lemme know.
 
Question for all you sours brewers. I think i have six gallons to rack of this sour wit to a six gallon carboy but its hard to tell if i really have that much. I really don't wanna end up with a half gallon of head space if i dont have quite six gallons. Anybody out there have success with long term sour aging with this much headspace? My initial thoughts are dont do it but wanted to check your experiences first. I really hate dumping an extra gallon if i end up using a five gallon carboy.


Use the smaller secondary and put the leftover in a growler or gallon size carboy. Small batch blending beers ftw
 
Funny you mention that. I brought in some beers for the brewers after they requested to try my sours but quickly learned most of them had brett which they do not like in the brewery. Drank one and i had to take everything off premise. Plant manager now jokes with me that i need to take a chemical bath every time i come to work, just to be safe. I assured them i sanitize my beard every morning though.


Water and ibuprofen. Got a little crazy in the ville last night.

Having an infected rahr & sons iron joe. The sink will finish the rest. Washed the truck, fed the yard, cleans a new fridge idk if its going be beer or my fridge and put in 2 lighting fixtures in. Blocked the enterance under my porch where a armadillo is trying to live. Hope its out from under there. Now resting a little before going to the next.

They were not joking when they said not to bring anymore brett beers to the brewery. Their concern is infecting the six figures of beer we have fermenting. I wasn't going to argue with them. I can hopefully explain to them over time how safe it is considering the steps we take to keep any type of microbes out of our beer, not just brett.

Oak Aged Yeti. No pic... bought a Belkin phone charger yesterday which decided to melt and ruin my phone. Had to file a claim at AT&T earlier.

Not sure what to do... try and repair the phone via third party, or just upgrade now. I'd reeallly like the pictures I had on the phone back.

And now I want tacos for dinner. Anyone ever notice how a taco is an upside down smile?

That is just rediculas. If they clean properly there shouldnt be any infection. Plus brett is not going to go through stainless and wont infect hosing if it doesnt make contact though there are already some on there. Its a lot of money sitting but you bringing brett on to the property wont do jack. Guess party at your place then.

Preaching to the choir man. You have to respect it but there is no reason to fear it. I do hope they can try more of my sours soon. I would love for them to start a sour program. If we want to be the most influential brewery in the Midwest, that HAS to happen sooner than later.
 
I hope everyone is having a great weekend. Went to the dr today, what I thought was the flu is actually strep throat. Got some meds and feel slightly better today but I don't see much beer drinking happening this week. Good news is, wife didn't go into labor during the 48 hours I basically didn't get out of bed.
 
I found the issue with my beer fridge. Not sure what caused it, but this is clearly the issue.


Most of the time they freeze up due to a dirty coil or low refrigerant. If that's not a frost-free model, it might just need to be thawed out.
