Yeah, the more I think about it and taste the sample the more I think I'll turn the temp control off and let it settle at the basement ambient temp for a few days, then keg it dry hop it with beans this weekend. I have 8oz of Modern Times Barrel aged coffee I'm going to drop in there.

Honestly I wouldn't worry about it at all, 1.022 at 8.5% shouldn't be terribly sweet once it's cold/got some carb and the roast from the coffee should offset that some as well.

Speaking of, having this bad boy while bottling my peach/cherry brett tripel. I will say this again cad, this is damn fine beer sir! Id certainly be proud of this one. Carb is perfect on this beer. Good work bud!

Thank you. I was happy with it for my first saison. Almost wish I didn't give so much away as xmas gifts to family. Color of that tripel is sexy. Ready for a beer. Coffee instead.
 
I buy picture frames and keep the stock photos in them; I'll black out the eyes of the people before hanging them on the wall. They make good conversation pieces, I think. Especially if you have names and back story for them. Ya know?

That particular picture is legit. That was taken on our wedding day in Maui. Sometimes legit pictures are better then stock pictures

I did the same thing with my Tis the Saison. O well, I will brew more.

And thanks. I didnt think the tripel would turn out that red considering there was only 2 lbs of cherries in it. The peach/cherry combo is going to be good. Last peach beer I did was just too acidic, to I tried to curb that with some sweet cherries.

Holy crap.. was just being nice, didn't need a "how to brew" dissertation. Damn.
