Back to on topic discussions here, for those with experience, how do you prefer to smoke a pork butt? Fat side up or down, and do you flip it at all during the smoke? Making my second one tomorrow and thinking fat down and no flip.
I do fat down, no flip. But what do I know.

fat cap up. You want it to melt, rehydrating the meat in the process. You also get better smoke saturation this way since the fat cap isn't blocking or soaking in all the smoke flavor.
You're smoking wrong. ;)
 
what's your CAD package of choice?

I use classic AutoCAD for work. Small aerospace parts, pc boards, etc.. Every now and then a customer wants to see how it will fit their processes and I get to do a model in Inventor. If I had my choice though, Revit is my baby. Love that program. Being able to do an entire 3D representation of your house/property in less time than doing 2D floor plans... pretty awesome.

If you're not drinking a daily dose of liquid pepper you're doing life wrong.

Actually I like a mixture of regional bbq techniques. I'm sure anal TX bbq snobs would scoff at my bbq, same as my chili, but just like with beer. I make what I like and don't care about traditional whatever.

Im 100% with you on that. Just giving ya heck! Memphis, KC and TX are top 3 in my book. Cant really go wrong either way, just different.

Yep, and I'll also give a nod to Carolina style pulled pork sandwiches. Not my favorite style of bbq sauce, but it does work well with pork and slaw.

I do like to drink a million beers a day in front of wood piles while listening to Marc Anthony. :p
