I'm glad you liked it! The yeast was the Wyeast Old Ale Blend, so there is some Brett in there, which likely helped keep it going since it was brewed on Black Friday of 2010! I've got more sitting around somewhere... Think I'll have one this weekend!

He was having a good year, easily his best. You guys got lucky that Williams wont be playing though. That may have evened the fields a little.

And if AJ is the next Smith, you guys should certainly trade him away to keep your lesser talent. That'll makes sense.

Back to on topic discussions here, for those with experience, how do you prefer to smoke a pork butt? Fat side up or down, and do you flip it at all during the smoke? Making my second one tomorrow and thinking fat down and no flip.

Since I don't own a smoker, I've never done a pork butt so keep this in mind. I'd think fat side up with no flip so as the fat renders during smoking it will marinate the meat.

fat cap up. You want it to melt, rehydrating the meat in the process. You also get better smoke saturation this way since the fat cap isn't blocking or soaking in all the smoke flavor.

Sweet, thanks guys. Butt getting rubbed tonight. Probably need to get some jalapenos and bacon too. Almost bought the huge 20 lber at the store last night, on sale from $60 to $35. ended up getting the smaller version for only $12.
