We are currently designing our MLT capable of 7bbl tho most beers will be around 5bbl. We understand herms and rims at this scale aren’t practical as is takes a ton of heat to perform a step change. We are uninsulated, herms or rims may assist in the heat loss. What options do we have for step mashing? Even if no step, it would be nice to perform a mash out.
