We are currently designing our MLT capable of 7bbl tho most beers will be around 5bbl. We understand herms and rims at this scale aren’t practical as is takes a ton of heat to perform a step change. We are uninsulated, herms or rims may assist in the heat loss. What options do we have for step mashing? Even if no step, it would be nice to perform a mash out.
 
Perhaps best to ask in a pro forum?

Many homebrewers step mash with multiple hot water infusions. Mash in quite thick, do a rest, then add enough boiling water while continuously stirring to bring to the next temp step and so on.
 
If you want to step you’ll need a jacketed mash tun.. direct fire is way to risky. Remember the old saying do it right or do it twice.

Do you have any experience with an electric insulated mashtun?
 
From what little I have learned reading the pro brewer forum occasionally, At that size I wouldn’t be concerned with heat loss.

A step or mash out can be accomplished with a hot water infusion.

We’re i in your shoes, these wouldn’t be my concerns, more important things to worry about. Imo

on that discussion I see this all over the web of how fast grain converts but that's not the whole story, it doesn't matter how fast grain converts if you cant remove all of the sugar, the bigger the mass the easier it is to hold temperature and stirring with an auger helps but the most important part is the vorlauf not conversion
