Hi All,
I brewed a pLambic about a year ago using 3278. I let it sit in the fermenter, untouched, all year long.
I recently tasted it and found it to have a nice sourness up front, but the vomit/funk to be too strong at the end. Anyone else have this experience? Will letting it sit longer mellow this funk? If not, I guess I can brew a simple wheat beer and mix?
Thoughts?
Thanks!

lol vomit? If you're getting vomit you did something really wrong. You should have plenty of funky barnyard, leather, cherry pie, horse blanket, etc.

What were you expecting? What did you use as a fermenter?
