Hello everyone,
I am not new to the reading but I am new to posting in the forum. Just let me say I learned a lot by reading and digging around in the forums so thanks to all. Alright lest get to the meat and potatoes of the post.
This weekend I began brewing my honey kolsch which is my second beer that I have brewed.
Original Receipt:
6lbs of Gold LME
1lbs of honey
wlp029 white labs yeast
2 oz of Hallertau (60min)
I created a 1000ml yeast starter using light DME and a stir plate that ran for about 24 hours.
Okay so I got my hands on 1qt of local honey which I really didn't know what it weighted. So come to find out 1 qt of honey is roughly 2.5 to 3lbs....
With that said I used the whole qt of honey in the mix. As it turned out, after doing a little research, the qt of honey weight about 2.5 to 3 lbs.
My FG was suppose to be about 1040SG, but it turned out to be 1064 which I assume was the addition of the extra honey.
My question is how is this going to effect the final beer and what would the projected alcohol content be with additional sugar? How is this going to affect to overall flavor of the beer?
If you have any questions please let me know and I like to have as much feed back as possible.
