    Brewers Best Carbonation Drops

I've been thinking about trying those out just to see how they work. I tried the conditioning tabs once in a cider and the darn things never really dissolved at all! Know a couple of folks that like the carb drops though so I'd stay hopeful.

    1 or 2 Pack of US-05

While peated malt is quite a strongly flavored addition, it's only 2% of your malt bill and it's character will fall back with age. I vote for your recipe as is! Add a second yeast packet if you can but I wouldn't say it's critical to success.

    No head on my Stout

Saw the updates here and wanted to chime back in. Mike, I've heard about cooking oats before usage but have never done that and I've brewed oatmeal stout 3-4 times now and head retention has been good for me. I've attributed that, at least in part, to the oatmeal. Maybe I'm wrong but I can't...

    No head on my Stout

Flaked barley needs to be mashed. Or at least an extended steep with some base malt to give enzymes time to work on it.

    Smell changes

I looked again at compleat mead maker and Schramm doesn't advocate continued feeding of yeast strains. His belief is that "prolonged fermentation my produce off aromas and flavors, which may or may not diminish with age." He admits that he has no direct experience but the man knows his mead. I...

    I'm a lucky guy

My wife and I did opposite shifts for several years and that made sure we were always happy to see each other and spend time together when we could. 20 years last October and I wouldn't trade for anything.

    Smell changes

I'm curious: why staggered nutrient additions? I think I would agree with Bernard that your yeast is stressing. Probably also moving back and forth between respiration and fermentation stages as more nutrients are added. All of this could produce aroma changes. The ideal process for me is always...

Should I try kegging exclusively for bottling?

In any pursuit there are people who regard their way of doing things as the only reasonable way. In brewing there are many ways to make quality beer. It doesn't require all grain brewing to to make good beer. You can make excellent beer with extract and steeping grains. It doesn't require...

Accidentally left hops in my cabinet

Refrigeration (esp freezing) is ideal for long term storage but the packaging is designed to preserve them effectively for quite a while. They rode on an 18 wheeler with no temp control to get to your LHBS for at least a few days.

    No head on my Stout

I'm thinking its a cleanser issue -esp after seeing the second set of pics. Either with the glasses or with the bottles. There's carbonation and a head on a vigorous pour but something is killing it and my money is on the oxy clean.

    Fermenting Weizen.

10 - 14 days would be typical. Your hydrometer will tell you when it's done but depending on your yeast and other variables it's not easy to just put a number of days on it. Look for a reading in the 1.012 neighborhood.

    no steeping grains ?

I've made several extract only brews over the years and had them come out great. I know a guy who swears by the Muntons hopped extract kits and loves what he makes. I haven't been able to get one of his brews just yet but it makes me curious about how those turn out.

    New HBS

Sweet. I'm bottling a smoked ale soon so we'll have a few of those chilled and ready in the next couple three weeks.

    New HBS

Thanks! Just fyi, my business partner commutes from Arlington so we could often meet you at least halfway if there's anything you need. By the end of the month we should have a will-call option on the website so you can order online without it adding shipping charges. Until then feel free to...

Need ideas for making an extract kit more interesting

I've been thinking about lemon in a wheat beer for this summer. Adding some peel and maybe just a little honey.

    New HBS

Hi y'all, Just opened a new HBS on the west side of Fort Worth! I actually live further out west than that and wanted to offer a shop to southwest Tarrant county and all the folks in Parker county that commute in. (Plus I needed a place for yours truly to shop) Been open 5 days and getting...

    Oatmeal and Black Treacle Stout

Looks solid! I've heard treacle differs in flavor from molasses but I've never tasted side by side. I'll add it to the list! Thanks for sharing!

    First brew, chocolate coffee stout

A starter might have been helpful in kicking off a faster, more vigorous fermentation but it likely would have made little difference to what you're seeing now. 4 months old isn't old for liquid yeast so long as it's been kept under refrigeration. I'm not sure what you mean when you suggest that...

    First brew, chocolate coffee stout

I'll expand now that I have more time. If you used a refractometer to take a reading it won't read accurately once alcohol is present. Use a hydrometer and be sure you're reading it correctly. If all you have is a refractometer there are some converters online that will let you plug in your...
