Pitching slurry to high gravity beers

The way i understand it, it means to use the yeast from a beer with an ABV of 6.5% or less. This helps insure that the yeast is not too stressed from fermentation and viable for the next batch. I often use a "starter" beer to build enough cells to brew my big beers. Right now I have an 80...

    First cider sulfur problem

Thanks for this information. Worked like a charm. 4 days of purging the keg with C02 and not a hint of sulfur to be found. I truly appreciate it.:mug:

    First cider sulfur problem

The batch size was 5 gal. I went back to check the recommended dosage of Sorbistat K (name of product) and it instructed to use .75 grams per gallon or 3.75 grams for a 5 gal batch. The ingredients are potassium sorbate not potassium metabisulfate as I stated previously. I got my potassiums...

    First cider sulfur problem

The problem is that after I kegged and carbonated my cider, it developed a noticeable sulfur smell. There was never a sulfur smell at any point from the beginning of fermentation through to the kegging. I used S-04 in the primary and racked it to a secondary once fermentation was finished (FG...

    Water or Vodka for Airlock?

Cold crashing after fermentation is how it has happened to me. No big deal since I use irish whiskey. Used to use cheap vodka, but I like to take a shot after finishing a brew day and I did not like the vodka. -J-

Noobiest of all noob questions, how long are things sanitary?

I do this as well, and though I am still a noob, I have had 13 batches without a problem. Everything is in Starsan before I use it and, when in doubt, it gets sprayed/dunked again. -J-

    My First Bottle Bomb

I do the same. Home Depot has dark grey plastic containers with the attached lids that open in the middle (can't remember what they are called) for $7 or $8. Two of them will easily hold a full batch. :mug: -J-

AHS Our Special Holiday Ale 2014

I have not brewed this recipe, but I brewed a Holiday spice that is ready to taste today. Unfortunately I have a cold so I am going to have to wait a few days. Yours sounds as if it well on the way to being great. :mug: -J-

    Another "Fermentation" Question

I found the culprit. Apparently my airlock has a crack in it allowing the gas to escape. I opened up the fermentor and saw a nice thick krausen, that is when I noticed that the airlock was not working properly. Thanks for your help. -j-

    Another "Fermentation" Question

Hey All, I am sitting on a batch of wort that is not wanting to start fermenting. As of this morning, it is at 60 hours. I am using Safale 05 that I rehydrated and it had formed a nice head in my rehydrating vessel when I pitched it. My wort was at 66 degrees and the yeast was at 66 degrees...

    Late addition question

Appreciate the help. I figured that I should increase the boil time and that is what I did, but it is nice to hear that it was the right thing to do. :mug: Thanks -J-

    Late addition question

Hey all, I had an extract recipe that I was doing a late addition on the extract, but when I added the rest of the extract, my temp dropped to 180 before I was finished with the addition. So my question is do I need to stop my time in the boil until I get my wort boiling again? Thanks, -j-

    Mint Extract

If they have been submerged in the vodka the entire time, I would not worry about it. More than likely the reason the leaves are turning brown is that they are soaking in alcohol. And I would add the vodka with the mint as the vodka has probably gained a minty flavor. -J-

    Tai Chili Beer

The vodka soak is to kill the nasties that might be living in the chills. Vodka is used because it does not add any flavors to the beer. -J-

Is it best to plant rhizomes in the fall or the spring?

A little late to the party, but I would wait until Spring. I do not have much experience in growing hops, but plenty in growing other plants and IMHO it would be better for the plants to be planted in the Spring after the last frost date in your area. The better the start, the stronger the...

    recipe help

Thanks for your help. My ultimate goal is to develop recipes in the styles I love that are my own but still meet the requirements for the style. And while I am not against IPAs, I truly love Reds, Browns, Porters, and Stouts, so I will start here. And thanks for the advice on brewing software...

    recipe help

I have brewed several extract "kits" with good results and now have decided to experiment some with my own recipe. I am hoping that you all will be willing to give me your thoughts on my ingredients and any warnings of a possible disaster. Here is the recipe for a 5 gal batch and hopefully a...

    Steeping Grains Question

I have done several extract batches with decent success, but I was curious about changing how i use the steeping grains. Usually I add them as soon as I start heating the water and then remove at 170 degrees (per the instructions). However, I have been reading on all grain and got to thinking if...
