I've got a chocolate stout fermenting right now and in another week or so I was going to dump this vile of mint leaves that are soaking in vodka right now. One thing I noticed when I checked the vile last night was the mint leaves are starting to turn a bit brown in some areas. Is it a bad idea to dump the vodka AND the leaves in the carboy?? Or just toss in the vodka?
 
I guess my main worry is the leaves will present bacteria if they're old and brown.
 
If they have been submerged in the vodka the entire time, I would not worry about it. More than likely the reason the leaves are turning brown is that they are soaking in alcohol. And I would add the vodka with the mint as the vodka has probably gained a minty flavor.

Ah, good to know. I lifted the lid up momentarily to get a sniff and it's good and minty.
