    Cider exposed to oxygen

I've done a few very simple (but successful) ciders and wanted to ask you all have ever noticed you think that brief exposure to oxygen after fermentation can cause off flavors? I know this is a huge problem for beer but thought I'd throw this out there all the same.

What is this? Seems like an infection?

So my wife is smarter than me, and she has pointed out these are simply seeds from the vanilla been I had in the fermenter...

What is this? Seems like an infection?

I'm about 3 or 4 batches of cider in and when I racked this stuff it left some black granules behind in the bucket. The samples I tasted from the hydrometer have a funky sulphur/soapy smell and I'm worried that this batch is not going to come out ok. Please share your wisdom with a noob...

    Ginger Cider

How much ginger do you recommend? Does it ferment with the juice or go in afterward? I am a bit ginger curious.... Sent from my iPad using Home Brew

    yeast

I've been using red star champagne, and most folks like it fine. It's been way over 10% which everyone seems to dig. I'm curious to know what kind of abv you guys get out of safelle 04? I'm interested in keeping the high abv, but wouldn't mind keeping more of the apple character and maybe not...

HELP! cider noob has pasteurization concerns :(

LOL, so I just had a second bottle throw it's metal top straight up into the air. Nothing broke, no one is hurt but more booze is lost. I'm really wondering if I should have left more space before bottling? It seems to me that if I open any bottles I will lose my carbonation right? Do I have...

HELP! cider noob has pasteurization concerns :(

So, a few weeks ago I successful pasteurization a delicious, yet crude cider on the stove. I even managed to preserve a touch of carbonation and sweetness. This morning I am working on pasteurizing this batch and one of my 1/2 liter bottles with the cool swing tops shattered. Do you...

Gross stuff floating near the top of my cider?

This occurred in bottling. I carbed with Dark brown sugar, and apple juice concentrate (form the can) . I also added (to much) cinnamon, cloves, and vanilla extract. Don't get me wrong, I love the taste but the spices were a bit to strong for most. I've been able to find a few posts about...

Gross stuff floating near the top of my cider?

I beseech the wisdom of the brew sages once more: This batch of cider (my 2nd) taste great. However, I'm noticing something very strange in about half of the bottles. There is a clump of something brown and viscous. I was drinking one while playing video games and that little lump felt...

    Dry hopped hard cider

I'm really curious about this angle. I'm going to read a bit more and give this a try. Ultimately, I'd love to brewing IPA. At the moment, I've really only brewed 1 1/2 successful ciders. I have to imagine that if a good IPA and a good cider had a love child in my glass I will have achieved...

    Caramel Apple Hard Cider

So this has been one my first home brewing experiments, but I am happy to report having made a 2 gallon variation of this recipe, and my very picky (as far as booze goes) wife loved it. She went so far as to describe it as "apple champagne". It's been bottled and we are very happy. Thank you...

A cider forum troll surfaces, with a few questions...

Hello, I'm have just tiptoed into this and have been having a great time. I've already brewed up a very simple cider, but it was tasty and did what alcohol is meant to do. Thanks to all of you who unknowingly fed me information as I lurked through your conversations here on the forum in the...
