    Yeast for mead

    Made my first mead with my brother-in-law. When visiting my beer store the lady said I would need one package of Pure pitch yeast for 5 gallons. Reading the package, it says an SG over 1.065 needs 3 packets. My current SG is 1.096. Can I get away with one package or do I need to go buy two more?

    Flavoring during primary

    Was wondering if I can add cocoa nibs to my stout while it finishes it’s primary fermentation? I hit a snag when the temp went too low and fermentation slowed significantly. I got the temp back up but now want to see if I can add the nibs around Wednesday if it hasn’t finished. Any thoughts?

    Multiple yeast strains?

    I was reading up on this beer and I noticed that it uses three strains of yeasts. I'm wondering how that works.. Are all 3 added at the same time? How does it affect taste? Does it take longer then usual because of the multiple strains?
