So, I have three oz of centennial hops in the freezer, left over from a botched order. They're in their packets and everything, and I know they'll keep for a year, but I sort of...want to throw them all into a recipe. Any suggestions?
 
How about an American IPA? Maybe:

11 lbs 2-Row
2 lbs Munich
.5 lb Crystal 20
.5 Carapils

1 oz @ 60
1 oz @ 20
1 oz Dry hopping

S-05 Ale yeast.
 
Oh, I forgot to mention...extract brewer here (until I get a bigger place).
 
+1 Centennial blonde or eve just a Centennial SMaSH. It's a delicious hop.

You're also part-way to a SN Celebration Ale clone, if you care to find some Chinook and some Cascade.

If you wanted a very simple IPA, you could do...
6lbs X-Light DME (3lbs for full boil, 3lbs late addition)
1lb Amber DME (late addition)
1oz Cent @ 60
1oz Cent @ 10
1oz Cent @ Dry Hop
Clean american yeast. US-05 is perfect. No steeping grains even needed.

It's a great hop, got nothin' on Amarillo though ;)
 
Yooper, Bell's Two Hearted is one of my all-time favorites! Any extract/specialty grain (I'd even try a mini-mash) help would be appreciated.

This is why I come to HBT!

I believe he has it converted to extract w/grain as well as AG...

I like's me some 2ha as well!!! I got plotz on it on saturday night. Methinks I need to add this to my 2-brew list.
 
BM sent me a bottle of his most recent CB, this batch dryhopped with 1oz Cent and 1/2 oz Amarillo. It was simply divine. Easy drinkin, but still nice and hoppy, but not bitter in the least.

Yep, that looks good! Now, that recipe has more hops than you have available, though, but check the AAUs, and maybe it'll stick work. This one is in Clone Brews by Byo:

2 pounds vienna malt
.5 pounds crystal 10
.33 pounds carapils
1 pound 2-row.
4.5 pounds DME

.5 ounce Centennial (11%) 60 mins
.5 ounce Centennial (11%) 45 mins
.5 ounce Centennial (11%) 30 mins
.5 ounce Centennial (11%) 15 mins
.33 ounce Centennial 0 mins
.33 ounce Centennial dry hop

Steep (mash) grains at 152 for 45 minutes. Add water to bring up to boil volume, and add extract.

This is a PM recipe, but it's easy to do in a grain bag. Steep those grains as directed, in 1.2 gallons of water, and then sparge (rinse) with 170 degree water by lifting up the grain bag and pouring the sparge water over it. (Or, follow DeathBrewer's tutorial).

Either recipe will work. Good luck!

I only have a five-gallon kettle, so I can't do the full boil on your first recipe, which looks better to me. I wonder if it can be scaled down?

Oh, I see where you see that. I'm guessing he did a full boil, then, but you sure wouldn't have to. I can run it through some brewing software, and see what a smaller boil volume would do. What size do you want to boil?
 
I've been happy with a 2 gallon boil, though I think my kettle could handle up to 2.5 gallons, as long as I'm vigilant on the boilover.

Yooper, which brewing software do you use? I want to start making my own recipes, so I'm looking for a good one to download.

I use Beersmith, and I really like it a lot.

Ok, for a 2 gallon boil, the recipe would be the same, IF you added one pound of extract at the beginning, and the last 6 pounds in the last 15 minutes. Then the hopping would be just about exactly the same.
 
That's great. Now, what yeast would you use? I've gotten very comfortable with liquid yeasts and would like to continue using them. Wyeast's Northwest Ale sounds like a good option, but I've also read of people making starters from bottles of Two-Hearted, as their beers are unpasteurized and unfiltered...check this thread on the Northern Brewer Forums...The Northern Brewer Homebrew Forum :: View topic - Bell's Two Hearted clone
 
These aren't liquid yeasts, but I did a side-by-side comparison of S-04 and US-05 on a Two-Hearted clone. I much preferred the US-05, as it finished lower and was pleasantly dry, and it didn't add any yeast-driven fruitiness.
 
US-05 is my go-to dry yeast. This might be a good opportunity to try it, you might find you like it.

If I buy liquid yeast, I feel wasteful if I don't get at least 4 or 5 uses out of it. For dry, though.... if I'm doing something highly experimental and don't want the yeast to pass on anything "weird" to future generations... I can dump the sludge, and not lose much money.

US-05 is a very, very consistent strain too.
 
Yeah, I didn't realize I could reharvest yeast from the trub in the primary...I'll start doing that from now on.

But what do you think about harvesting the yeast from a bottle of Bell's?

I just pitched a beer with some that my brew buddy gave me...you just have to do some digging/googling to see which Bell's has it in the bottle.
 
I have never had the Bell's because we can't get it here. Dang TABC. I have the hops maybe I should brew the clone too so I can find out what it tastes like. It sure looks like a solid recipe.
 
Holy sheet, Bell's is OG 1.058 and 7% ABV which is a FG of 1.004!

For the AG I'd mash at 148*F for 90 minutes and toss in a half pound of corn sugar in place of 1# of 2-row. For the extract I think I'd go with a full pound of corn sugar in place of 1# of extract. Otherwise it wouldn't attenuate that much unless you have super crack-addicted yeast.

Here's the recipe I cobbled together in BeerSmith if anyone cares. My brewhouse efficiency is 75%.

8# 2-row, US
2# Vienna, US
8oz CaraPils
8oz Crystal 40L
8oz Corn sugar (last 15 min of boil)

Mash 148*F for 90 minutes.

1/2 oz 9% AA Centennial 75, 60, 45, 30, 15, 0. 1oz DH in secondary for 7 days.
SRM 6.5 IBU 57 OG 1.061 est. FG 1.007 est. ABV 7%
 
I have an extra pound of clear candi sugar sitting around. Can I use that instead of the corn?
 
Sure, but I'd either: Use 1/2 lb -or- Use the full pound and remove 1# of 2-Row.

You may have better luck reaching your FG by using the full pound of candi, but I'll defer to Sacch, who already has this plugged into Beersmith.
 
Yeah for AG I'd use a half pound of the candi, or a full pound to replace a pound of extract in the extract recipe. I'm assuming the extract will be moderately fermentable so it'll take more sugar to dry it out than in the AG case where you can just mash lower and get higher attenuation.

I should have that in my signature. All my questions are about extract brews. AG maybe next year.
 
Most pale extracts are ~80% fermentable, while sugar is ~100%. Just FYI if you really want to be precise with that substitution.
