OK, here's a noob question.. I usually use dry yeast, and I'v only experimented with starters a couple times. What I'm wondering is; How do I know how many billions of cells are in my jar of washed yeast? My jar is a one pint jar and has about 3/8 inch of yeast on the bottom. If I pour just the yeast into a measuring cup it measures around 15ml... Please help me wrap my head around cell count....

according to wyeast:

Estimates of cell counts can be made using percent yeast solids of the slurry. Percentage of yeast solids per volume of slurry can be estimated by allowing a sample to sediment under refrigeration and estimating the percent solids. Generally 40-60% yeast solids will correlate to 1.2 billion cells per ml.
