A couple of my wines are now finnished. I added the fermentation stopper / campden tablet and finings yesterday and the wine is now really clear.

Just wondering how soon after adding the campden tables etc I have to wait before I can have a drink?? :drunk:

Oh, drink it anytime you want! But, it's best to bottle it after it stops throwing sediment. What I do is stabilize (like you did) and then rack it in a couple of weeks. If no more sediment appears in 45-60 days, it can be bottled. I like to bulk age it longer, though, in a carboy. Then I bottle when I'm ready.
