I have 5 gallons of cider, in it's secondary fermenter. It has long since finished fermenting, I am curious as to what to do with it to make a good "still cider" with some mulling spices and possibly stabilize it and back sweeten. Has anyone made something like this and what methods did you use and ingredients.

This was a pressing that was done in the fall of last year, and I want to have it ready around the same time this coming fall.

I've gotten advice from Ms. Yooper on stabilizing with sodium metabisulfite (Campden tablets) and potassium sorbate. I think it needs to sit for a week or so before it's stable.
