Unfortunately I don’t have time to brew beer anytime soon. Summer will eventually arrive here in NY so I’ll get some inspiration from @ThirstyPawsHB and make some Limoncello. The lemons have been cleaned of any wax, let the peeling begin. Oh and some motor oil to keep the engine humming.

Look at that yellow color already after less than 30 minutes in the everclear.

Just a simple ale to try out an experimental Bootleg Biology yeast called Kakheti. They suggested white wine like flavors, one reason I figured I'd give it a shot. The beer ended up fine, kicked last night, but the yeast didn't work out as advertised. Suggested attenuation 85%, which would have yielded .008 fg. Stalled at 1.019. I roused and added a few degrees of heat. A week later 1.018. Roused again and tossed in a pack of Knottingham. As best as I recall, finished around .010. Finished beer was very good, and while I didnt get any hints of white wine, it was very different from just a Nottingham fermentation. I probably wouldn't try this one again. Might not be an option as I don't see it offered on their site anymore.
 
Visiting SoCo Home Brew. Decided to do a split batch experiment with the NEIPA. One made traditional using ALDC and one using the hop oil dry hop substitute.

They rent a spot at Thirsty Planet Brewing who finally got their tap room up and running. City of Austin held them back for 5yrs. Did some sampling. Brut IPA, green tea lager and a too thin IPA using WC hops. Brut was solid and tropical. They didn't make it ultra dry like others I've had. Lager was really nice with subtle green tea.

Not 100% sure I believe this, but my co-worker has a son who's a Shariff in California that has worked every single day for 6yrs and makes $300k/yr with all the overtime and double time money.

Had some PhP EJ this morning after work. Playing hooky tonight so pic's are on their way.

Starting pay, if I'm remembering correctly, is $100k here...so I'd say it's not unreasonable to expect something north of that...$300k though, seems a bit unimaginable
 
@pshankstar here's a variant of the Lemoncello.

- 1cup Lemon/190 Everclear Mixture
- 1cup RO water/half cup sugar (syrup)
- 1/2 Cup Heavy Whipping Cream
- Top up 750ml with RO

I think the 1/2 cup sugar is getting closer to my liking. Even the 3/4cup was a bit sweet.
