I'm thinking about doing a Pils/Tettnang sMasH to get an idea for the malt and hops flavors. Unfortunately I can't do lagers....YET! I have a ferm chamber lined up but alas no temp control yet. What would be an ale yeast that could make this work fermenting around 65*? Thanks.

I did a SMaSH with Munich and tettnang using Wyeast German Ale, turned out malty, lager like, and awesome. Terrible head retention though.

Thanks for the recommendation Denny. I will look into it.

Any dry yeast recommendations? (I'm a cheap bastard out of necessity)

My choices for something like this would be. WLP 029, 810 or wyeast 1056. All those yeasts will turn out a very clean brew. Just make sure to keep your ferment temps at 65 or under if possible.

I think I might go us-05 and turn the heat down a bit. (shhh... Don't tell SWMBO) My pantry stays a few degrees cooler so I think I may be able to do 64* or maybe less:) I usually start all of my fermentations in there and I've seen it as low as 62 but it's warming up a bit here so I don't think it'll get that cool.
