Hi Guys,

I tried my hand at a chocolate cherry chipotle stout. I'm just about to bottle and have a little concern about the white bubbles and film that have seemed to collect at the top of my primary. I have had beer in primary for about 3+ weeks and have dry peppered with sanitized chipotles and then cocoa nibs (and also added some ground cayenne for heat) The beer tastes pretty good, has a slight sourness to it and has become more peppery and more spicy each sample I've tried. I have attached a photo , please let me know if I should be concerned or if perhaps the oils from the peppers or nibs are causing the strange look.

yeah mang, yer making sour beer now! You got some lacto bacteria in there some how. Me personally, I'd let it go and read up on sour beers.
