As Sam pointed out, the recipe in Beer Captured isn't for the dunkel, and now that I look at it, it's extract, but here it is in case you still want it.
Weihenstephaner Hefeweissbier
2.5 gallon boil / 60 minutes
6 lb. Muntons Wheat DME
1 oz. German Hallertau Hersbrucker @ 4.5%AA
Yeast 1st choice: Wyeast 3068 Weihenstephan Weizen
Yeast 2nd choice: Wyeast 3638 Bavarian Wheat
Prime with 1.25 cup Muntons Wheat DME
Pretty easy recipe. For a partial mash dunkel tho, here's page 152:
Hacker Pschorr Weisse Dark
Steep in 1 gallon water for 30 mins.
8 oz. German Munich Malt
7 oz. Belgian Cara-Munich Malt
1 oz. British Chocolate Malt
Sparge grain w/ additional gal of water, boil and add:
6.25 lb Muntons Wheat DME
1 oz. Tettnanger @ 4%AA
Yeast 1st choice: Wyeast 3638 Bavarian Wheat
Yeast 2nd choice: Wheast 3333 German Wheat
Prime with 1.25 cup Muntons Wheat DME
I might be tempted to try the Weiner Steven recipe with the specialty grains from the other.
