Hey guys,

I'm doing my first hefeweizen with wb-06 right now, and I just wanted to let you know that it's undergoing a violent brew. It's fermenting at approx ~70 farenheit which is the normal range, and I already had to place a blow-off after only 5 hours despite lots of headroom. Wondering whether it will be bananas or cloves, or both ;)

P.s. I only re-hydrated the yeast for 30 min.
 
I have a Belgian wit fermenting now with safebrew t58 that got pretty violent. It took off within a couple of hours too, and by the next morning it was pushing the starsan out of the gallon jug I had my blow off tube in. I have never seen anything like it. Took a sniff when I replaced the blow off with a regular airlock and it smelled great. It's in my basement where it is about 66#, but it got pretty warm in the fermenter. It go as high as 73# at one point.
