Depends on the wattage of your fan, which will also depend on the voltage of your power supply. Got those two bits?
 
Depends on the circuit you plan to use that 50000 ohm pot in. Given that the fan is 12v/.35a; it has about 35 ohms of resistance. A pot in series with the fan would need to have around 30-40 ohms to function as a decent voltage divider.
 
id get a smaller fan. im using a 120mm and full speed its just fast enough. i think the magnets on the fan slow it down some. the smaller fans have to spin faster to achieve the same cfm. if i added a speed dial on mine it would be pointless since i got to keep it going full speed. I pulled this fan out of an old pc i build a while ago and the fan has 3 settings already on the wire (low med high).
