I brewed up a starter of 001 on Thursday of last week in anticipation of brewing a Pliny The Elder clone on Saturday. Well I threw my back out on Friday and took the whole weekend to recover. I was able to decant the starter wort off the yeast and do another 1500 mil starter on Sunday. I've been on call all week and haven't had time to brew so wen the second stage looked finished I threw it in my brew fridge and stored it until today only covered with a piece of aluminum foil. I took a big whiff of it and it smelled slightly of vinegar. Is this normal in an over oxygenated wort or is the starter infected?
 
no way to tell from here but i've kept flasks of yeast in my garage for weeks that were covered with foil and i'm still reusing that same yeast with no problems.
