Hello!
So I use to work for Resurgence but in the kitchen. They make a Sponge Candy Stout. My current job makes sponge candy and want me to use the left over pieces to make beer. I plan on making a milk stout but I’m wondering if I’m better off adding the pieces to the mash or the fermentation chamber. The sponge candy itself is only sugar, corn syrup, water, and baking soda so I know to adjust the fermentables. I believed Resurgence used Heath candy. I’m just not sure when to add it. Thank you
 
Secondary stage. Otherwise the yeast will ferment it like any other sugar. If you add it in the secondary, you’ll get more of the flavor of the candy.
