For some reason I'm getting some very different responses on what kind of casing and what mm casing to use. Am I wrong in thinking 15mm or less or will 18-20 shrink that much with drying?

I make my pepperoni/sausage sticks with 18 and 22 mm casings and am pretty happy with the results.

The smaller casings are tougher to stuff, you can fudge and add a bit more water to the mix, but I like to use the larger casings.

I ended up making a stuffing tube out of thin wall titanium tubing to get as large a bore as I could, on a 1/2 inch outside diameter, about as large as would fit well through the dry casing.
