This beer turned out great. The Simcoe/Centennial combo provided piney/grapefruit notes and an overall pleasant bitterness. The German Ale Yeast ferments pretty clean, but gives a subtle fruitiness. The beer definitely benefits from an extra week of cold conditioning in the fridge after bottling. Enjoy!
