Setting up a HB for a party next month. Interested in making something sessionable that has enough flavor for the beer snobs but not so heavy or complex that an everyday drinker couldn't enjoy. I am still a newbie so I like simple until I totally get the hang of everything.

This Honey Lagar from Joy of Homebrewing sounds appealing:

3.5 lbs extra light DME
2.5 lbs light clover honey
1.5 oz cascade hops (boiling)
0.5 oz cascade hops (finishing)
american lager or pilsener type yeast

Thoughts or Suggestions?
What yeast strain would work well with this?

If you're looking to brew something to serve in a month, you really shouldn't be doing a lager yeast. You should go with an ale yeast that doesn't require the same conditioning time that a lager yeast needs.

6 weeks. I am not set on a lager if that is cutting it too close . . . .
What I like about this recipe is the lightness and simplicity and the fact that I have a local source of AMAZING honey.

What other recipes would you suggest.

IMo you have "Braggot light" which IMO is going to be a bit strange. If it were me I would do something like:

6# Extra light DME
1# honey

a couple #'s of some steeping grains (If you like honey flavors use 1# of honey malt)

stick with the cascade with a light hop schedule

Kolsh yeast or US-05

Thanks for the suggestions guys.

I am really liking this recipe after looking around at ales instead of lagers:
ZZ Hop Light Honey Beer

4.0lb Light Dry Extract (60 min.)
0.4lb Light Dry Extract (10 min.)
2.0lb Clear Honey (10 min.)
0.5lb Crushed Amber Malt (Steep, 60 min.)

0.50oz East Kent Goldings (60 min.)
0.25oz East Kent Goldings (15 min.)

1/4 tsp Irish Moss (10 min.)
1 Packet Safale S-04 English Ale Yeast
