i made a 1gal mix of this port (http://homedistiller.org/forum/viewtopic.php?f=10&t=10709) last year to amazing success. this year i thought i would try 5 gals. it's in the secondary and ready to have the port and brandy added, but i tasted it and it's quite tart, and there's scummy bubbles on the top of the liquid. any thoughts? i don't want to waste $100 worth of port and brandy that the recipe calls for at this point if it's gone sour...
