Hello!
I have made my first sahti, my strongest beer so far at 8.5%, it has been in a bottle for a week, just tired it and it reminds more of wine aromas wise, and tastes very overpowering boozy and sharp? Not sure if everything is okay or if I should leave it to condition in bottle for longer, would the sharp and overpowering tastes mellow out and leave something bit more easy to handle?

Thank you!

I'd give it some time to bottle condition. Won't hurt anything to wait, the alcohol burn may mellow out quite nicely.

I had a tripel do the same thing. Waited 6 months and it was perfect.

6 months! wowzers that is a long time! :D What would be average time suggested to wait?

Generally the more alcohol the longer it will need to bottle condition. Remember yeast don't actually like living in booze so it takes them a bit longer to clean up
