Recipe input for Blanche de Chambly Witbier

Hey, I am fairly new to brewing so would love some input on my next brew recipe. I am looking to replicate Blanche de Chambly and have came up with a hybrid recipe from a few I have seen. Any additions, subtracts or advise would be great:

5.5gal batch

3lbs pale dme
3lbs pale wheat malt
1lb torrified wheat
1/2lb light candi sugar
0.75 oz bitter orange
0.50 oz coriander
possibly a minuet amount of anise and black pepper
1oz saaz hops
Belgian Witbier Yeast (wyeast 3944)
