I'm starting to harvest active yeasts off of my fermenting beer kreusen. Quick - probably dumb question that I need to ask. Can I CAP these containers, or do they have to be airlocked? I'm using Palmers book for my methods but he doesn't mention if it's cap or airlock when you're harvesting to store... I think I can cap them, but I fear the potential explosion.
Thanks!

If you're harvesting from skimming krausen, there may still be some active critters so I might airlock it and stick it in the fridge for a day before capping. If you're pulling from the bottom of a fermentor you can be more confident that they're all sleeping.
