pineapple saizon

I was looking at doing a 5gallon saizon extract and wanted to incorporate pineapple into it, what would be the best way to do this....if its even possible?

I'm thinking even a pineapple/coconut would be tasty, but I've never added fruits or things like this to a beer, not sure how it all works
