OK.....

Since 3-letter words cannot be searched (here or in most forums), has anyone thought of using PEX tubing for a RIMS system?

The max rated temp is 200° F., so that is not a problem. The only time I will be over max is during a boil, but not for transfer.

A better option just to be on the safe side would be some high temp silicone tubing from an online source like Northern Brewer. It's your call, and if you are sure you'll never be over 200 degrees anywhere in your system it will work.
