Over smoked my Peproni

So my Bradley smoker doesn’t get hot enough due to the fact is I’m in Canadian winter. So I was smoking my pepperoni and couldn’t get my internal temp to safe zone. They smoked for 6 hours and then i boiled them to ensure they got to a safe temp. The pepperoni has a strong flavor and i think I over smoked it! Suggestions for the future?View attachment 606347
