I am looking for proven Oktoberfest style recipe that uses ale yeast, similar to BM's "OktoberFast" or EdWort's Oktoberfest because I cannot do the necessary temperature control for lagering (yet). I have read through both threads, and there were a couple of extract ideas, but nothing really definitive on an extract version.

I understand the difficulties posed by the grain bill for an AG Oktoberfest style vs. extract in that some of the grains would need to be mashed. However, Midwest, AHS, and NB all sell Oktoberfest style Lager kits based around Munich LME.

Can somebody help me out? :mug:

Not a real Oktoberfest but a pretty good beer.

This is what the kit comes with:
2 Cans - Amber or Light Malt Extract - Muntons Malt Extract Light 3.3 lb
0.5 lb Crystal Malt 60L
0.5 lb Munich Malt LB 6.5
0.5 lb Pale Malt
0.5 lb Chocolate Malt
2.5 oz Hallertau Hop Pellets AA 3.0
1 tsp Irish Moss
0.75 cup Priming Sugar
European Ale Yeast - White Labs English Ale Yeast WLP002
