Has anyone ever used oak chips and cubes? I'm about to make a 16% ABV English barleywine and thinking about adding French medium oak chips in the secondary for a few days then putting the beer in a keg and letting it age on American medium oak cubes for a few months.
How much of chips and oaks should I use? I'm thinking 1oz of the chips for 1 to 1.5 weeks? Then 2.5oz of the cubes for a long time?
