Newbie question about cider brewing & fermenting times

I've read a couple recipes for cider and I decide to mix and match but one thing I am curious about is the fermenting period. One recipe said 2 weeks then bottling or secondary and the other said 4 weeks then secondary.

Just curious as to how do I know when take care of that.

Also i was planning on getting a bigger carboy or jug. Plastic vs Glass?

I just bottled a batch of cider that was in the primary for about a month. It has been bottled a week now and is conditioning at room temp. To really get an idea if it is ready to bottle you should check it with a hydrometer - which I use only occasionally. When the sg steadies then bottle. No need to secondary.

Cider does not ferment as wildly as beer so don;t worry about a larger carboy.
