Hey folks. My name is Austin I'm new to the site. I joined because I think it's time for me to have some input from other people. Specifically, I'm having an issue with stuck fermentation. My wife and I made wine back in Maine and never had any problems, but since I've moved here I can't get my fermentation below five brix. I'm not a master brewer by any means, but I've made like 20 batches of various recipes. I'm completely self taught so im sure im doing some stuff wrong, but I can turn out a very tasty and drinkable product, I've been brewing here in Colorado since last fall and the meads and wines I've made have been great. Still, I know i could be getting higher alcohol output.
