I have a new 15.5 gal, SS pot coming and was wondering if or what it is I need to do to break this in prior to my first boil. My plan was to sanitized and boil 8 gallons of water prior to brewing. Should I be looking to do more?

I don't think a boil is necessary. You will sanitize when you boil wort the first time. Maybe just give it a scrub with Bar Keepers Friend and a good rinse.
Clean it well and use it.
