I'm looking to make an altbier soon, which I intend to ferment around 63F until fermentation is complete. Afterwards I would like to lager for 3-4 weeks at 35F. I know from experience that bulk lagering a true lager offers better results than lagering in the bottle. Keeping the lager at atmospheric pressure allows unwanted gases (sulfur compounds mainly) to evaporate leaving a crisper beer.
However, I was wondering if that is true for ales too. In a way I would feel that the higher fermentation temp scrubs all the unwanted gases a lot faster. Reason I am asking is that bottling right after primary fermentation is much less of a hassle. So does any one have any experience with cold conditioning ales in the bottle? How do they turn out?
