Just got started this year ideas for brewing with odd extras

Just made a Fresh Hopped (hops right out of my garden 2 1/2 lbs), Honey, Chamomile (fresh out of my garden 3oz) IPA

Had the first bottle last night and it was oddly amazing.

I plan making a Imperial chocolate pumpkin stout this weekend
Want to make a Imperial chocolate sambuca stout at some point.
I guess fall has me brewing on the sweet end

Ideas on how much coco nibs to add to the pumpkin stout and how much and how to add sambuca to the sambuca stout?

My line up so far this year.
