+6 gallons: 3 gallons of "Mojito Mead (lime and mint)" and 3 experimental 1 gallon batches that will be using habanero peppers and cacao nibs in varying amounts.

-5 gal is a classic Mead with 2013 honey from a local apiary.
-5 gal is another classic Mead from a 2015 honey, same apiary. I've read that the fresher the honey the better. So I can't wait to get some fresh 2016 honey and see

Looks like I never added my Very Berry Melomel to 2015's thread, pitched in '15, bottled in '16, so I'll add that now too

I made my very first mead on January 1, a simple recipe found on StormtheCastle.com. Beginning on June 14 and then every Sunday thereafter, I began making one gallon of mead. Yesterday I made my first melomel, a raspberry flavored affair. So altogether,I've made 7 gallons.

Since my last update, I've made 1 gallon of a traditional sweet mead, a 2-gallon batch of must that I plan to divide separately into 1 gallon melomel batches (not sure what flavors yet), and a 5-gallon batch of chocolate mead. So that's 8 more gallons for me -- 14 gallons total thus far, though I'm still trying to decide what I'll be making today and whether it will be 1 gallon, 2 gallons, or 5 gallons...so many indecisions to make! 685

I brew quite a bit of test batches, here's what I've done so far this year:

1 gal: Spontaneous innoculated mead test
1 gal: French Toast
1 gal: Blackcurrant
1 gal: Buckwheat traditional
5 gal: Mango + black pepper
1 gal: Apricot
1 gal: Cherry + pasilla peppers
1 gal: Triple berry blend (raspberry, blackberry, blueberry)
5 gal: Peach

the following meads will be pitched before 2017:

2 gal: Strawberry + Rhubarb
5 gal: Rosemary + Ginger braggot
4 gal: Apple pie

I have a few others planned in the queue, but might not get to them before year's end. These three will definitely get started before then; shooting to start one tonight even :)
