How high will Nottingham go?

I want to make a 12% beer :tank: and was wondering if at 12%, will Nottingham yeast die and not carbonate?
 
It will go to 10, it may go to 12% if you use say 3 or 4 packets for a 5 gallon batch. But at that level I woudn't count on bottle conditioning it.
 
Feed the yest and you should get there.

Start with wort about 1.090, and when fermentation starts to slow down, add some more fermentables. That way the yeast can build up a colony and not get osmotic shock when pitched.

Probably an idea to have up to 10% of the fermentables as simple sugar. It will help keep the FG down. That would be up to about 1.5 lbs of sugar in 5 gallons.

If you do use any sugar, this should be what is added last.
