I found a recipe I want to try, but the % is a little low, about 3%. I'd like it to be at least 5%. I know that basically more malt/sugar=more alcohol % but I don't want to just wing it because I know there are other factors that might screw up the taste. So any suggestions to alter this recipe?

Recipe Type: Extract
Yeast: Windsor
Yeast Starter: None
Additional Yeast or Yeast Starter: None
Batch Size (Gallons): 5
Original Gravity: 1.052
Final Gravity: 1.024
IBU: ~17
Boiling Time (Minutes): 60
Color: ~35 SRM
Primary Fermentation (# of Days & Temp): 11 @ 70
Tasting Notes: Nearly opaque with a creamy tan head. Subtly sweet, toasted malts come through, crisp

M.O. Stout (Milk Oatmeal Stout)

Light Dry Malt Extract – 4.5 lbs
Black Patent – 8 oz
Chocolate Malt – 12 oz
CARAPILS – 8 oz
Lactose – 1 lb

up your DME to 5-5.5 lbs.

use another yeast. windsor has <65% attenuation (pretty low IMO). check out either Nottingham or US-05 or US-04 (recommended). those guys have closer to 75% attenuation.

i would also drop your chocolate malt down to 4-8 oz. 12 oz is a lot of chocolate malt IMO.

Almost seems more like a sweet english mild than a stout. Take out the lactose and the oars, and thats pretty much what you have, a mild.
