Dang that's a good idea... I always fill up a spray bottle when I mix up a 5 gallon batch of Star San... Never considered saving the entire thing...
 
According to John Palmer, you really could use them to ferment as well. There's not enough chemicals in one bucket to do any harm (assuming that some leech into the beer, and assuming a healthy immune system). He also goes on to say that one should be more concerned with the amount of alcohol one puts into his body vs the minute chemicals from plastic. :)

FWIW: Home depot sells a white food grade bucket for just a bit more than the homer bucket. 1,2,4,5 plastics are good for food.
