Good morning from the deep south! I've been running a beer fest for the last several years and this year I was bitten by the homebrew bug this year! Had someone getting out of brewing give me a bunch of gear so I am now in the process of modifying some 1/2 barrel kegs into my brew system. Jumping straight into all grain 10gal brewing! Wish me luck LOL!!

Sounds like you are well into the process. When I started brewing I was glad I was only brewing 5 gal at a time because I wanted to brew a lot and 10 gals would have taken forever to drink. Of course it was mostly me drinking my beer. Also, if you mess up (which will happen from time to time) you end up dumping a lot less beer. Just my thoughts, but good luck with this crazy obsession.
